Best Summertime Recipes: Broccoli Salad


I should add the word "Easy" to the series title. "Best EASY Summertime Recipes". Because if it ain't easy, y'all know it's not gonna happen. Especially in the summer. 

In my mind (or fantasy land), I would pick fresh tomatoes, grown from my garden, and throw together several fresh, light dishes with other organic ingredients that Reginald picked up at the local Farmer's Market. (Reginald is our Butler in fantasy land.) 

I don't want to sound pretentious, but I think Reginald would wear a butler uniform of sorts. 

Until I get my thoughts gathered on staff uniform style, where to find Reggie, (as we would call him when we are not in formal company), and how to even grow a single, solitary vegetable, I will continue to use Kroger Instacart. Because let's be honest: Kroger has the best sales and your Instacart shopper is basically like a personal assistant.

BROCCOLI SALAD:

1/4 c sugar

1/2 c halved cherry tomatoes 

2 Tblsp white vinegar

8 oz sharp cheddar cheese cut into small chunks

1 c mayonnaise 

1/2 c golden raisins

1/2 c chopped red onion

6 slices of cooked, crumbled bacon

1 head broccoli

Remove stalks and leaves of broccoli and wash broccoli thoroughly. Cut flowerets and stems into bite-size pieces. Place in a large bowl. Add crumbled bacon, onion, raisins, and cheese. In a small bowl, combine remaining ingredients, stirring well. Add to broccoli mixture and toss gently.
